We have been involved with dairy farming on the Atherton Tableland in Far North Queensland for the last 25 years. We have a love of the land and self sufficiency. In 1999 we finished dairy farming and moved to our small property near Lake Eacham. We could not part with our whole herd and took a couple of milking cows with us. From here the cheese making developed.

We provide hands on informative courses in our country kitchen using the fresh milk from our cows.

I have always had an interest in cheese making and wanted to pass on this knowledge to as many people as I could. I started my Cheese Making Courses back in 2004 and it has grown since then.

We are very passionate about sustainable farming and provide most of our food from the farm using biodynamic and organic practices.

This includes beef, chicken, pork, pigeon, vegetables, fruit, milk, cheese, honey, eggs and many wood fired oven delights.

Joe has built a number of wood fired ovens. He is happy to give you tips on how to build your own oven or build one for you.

...Win and I have attended several DIY courses over the years. Some were good but quite a few were pretty awful. However, we made up our minds to take part with the idea of hopefully having some decent cheeses to eat. We are so pleased that we have been able to experience the Cheesemaking and More course provided by Jude. Her course is more than sitting and listening. Her methods involve you in every stage of making a cheese. The two days are full of fascinating information and hands on at all stages of the processes of the various cheeses. And this is not all. The whole scene is a delight to be part of, the beautiful location near the Gadgarra Forest, a very workable farm kitchen, with plenty of utensils to work with, meeting new and interesting people, enjoying being involved in the action . On top of all this, yes we can now make some delightful cheese and have taken away some delightful memories as well....
